Here I am starting with its Salad made with tangy Tomato. :)
that is "Yam and Tomato Salad".
This is basically a way in which salad is made of yam and tomato in 'Shri Lanka'.
1 cup Yam pieces, cooked,
1 tsp oil,
1 tsp mustard seeds,
2 green chillies, finely chopped,
½ cup peeled & chopped tomato,
1 tsp sugar,
Salt to taste,
1 cup fresh curd, beaten,
¼ cup chopped coriander leaves,
2 firm red tomatoes & cucumber slices ( to serve the salad with ).
-Steam cook a large piece of Yam with its skin, in a pressure cooker. Peel and cut into tiny pieces or roughly mash it
-Heat the oil and add in mustard seeds. When they stop spluttering, add the green chillies. Sauté for ½ minute.
-Add the tomato pieces, yam pieces and beaten curd. Mix well and add sugar, salt and coriander leaves. Remove from flame when mixture is thick enough.
-Select a firm red tomato and cut it into 5 to 6 petals with a sharp knife.
-Open each petal carefully and cut out the inner petals of each, remove pulp carefully and push the smaller petals inside and pull out the exterior ones.
-Make balls of the mixture and put inside the tomato. Place cucumber slices between the inner and outer petals.
