Sharing here with You a Mexican dish - Mexican cutlets with Salsa Verde .

Ingredients :

For the cutlets
2 cup boiled and mashed potatoes
1 tsp corn flour
½ tsp pepper powder for the potatoes
1 cup kidney beans ,soaked, boiled and mashed.
¼ tsp pepper powder for the kidney beans
Chili sauce
Oil for frying
Few spring onion leaves, chopped, to garnish

For the Salsa Verde
2 medium sized green tomatoes(or tomatillos)
2 jalapeƱos,
2 tsp chopped coriander leaves/cilantro leaves,
1 small capsicum
1 tsp lime juice,
Pinch of vinegar,
1 tsp sugar(optional),
Salt to taste.

Recipe:

For the Salsa Verde:
Cut tomatillos/ tomatoes in to half and bake it for 5-7 mins until its skin gets lightly blacken.
Blend all the ingredients together in a mixer.
Then put on the stove to warm. Stir often till the mixture turns thick like a sauce. Remove from the stove and cool to room temperature.

For the Cutlets:

Mix together mashed potatoes, corn flour, salt and pepper. Divide into 10 equal portions.Using hands flatten each portion into 2 inch diameter circles . (Like thick puris.).
Mix together the mashed kidney beans, salt, pepper and chili sauce .Divide into 5 equal portions. Flatten them into 1 ¾ inch diameter circles.
Sandwich a kidney bean puri between 2 potato puries. Seal the edges and shallow fry in oil. Make the other cutlets the similar way.
Arrange all the cutlets in a plate sprinkle chopped spring onion and apply Salsa Verde. Serve when cutlets are hot.

(One variation to this is to sprinkle cheese over cutlets and before serving cover the cutlets with a lid and warm them for 10 minutes till he cheese melts. )

Hi Viji,
thanks dear, i am feeling ok now, it wasjust that since last 2 days was much busy with other work , nothing else to worry. :)

Asha ,
You Know I always value your advice and ever since I read it from your blog ,I keep it in mind to do not get addicted to this blogging. It was taking much earlier to post one recipe, now I feel it easy to do. You are correct , And I am going to change it to once or twice a week from next week. I have defined some priority over blogging and always keeping that in mind. Just love creating something new each day. Hubby loves that too. Not sacrificing anything of our normal life, thats why I keep doing it. Thanks for being there ,you are always showing me right path and I am glad that you are here with me. :) . Hugs to you. Happy Pongal.

Trupti,
what I know is his is being served this way only, with Salsa. its a kinda snack dish or a part of buffet mainly.
dont worry dear, as I have wriiten much above to Ashaji ,khali etlu j kahish ke bloggin enjoy karva mate j chalu rakhu chhu, hu to evi chhu ne ke koi pan vaat nu tention nathi leti , levani jarur hoy to pan , etle chinta nahi karti . :) . Believing in Munnabhai theory- "Tension Leneka nahi Deneka :)) " . pan tu jyare kahe chhe to mari moti ben jevu lage chhe, kaik bahuj najik na saga jevu . thank you for being there.

Supriya,
We haven't expanded our life here much, since we got to know that we are goin to shift, so it is easy to wrap up all these things too.You won't believe we both are so tension free guys that we take life much easily, otherwise with last few days we had such situation in which we might have felt caught up by troubles (hubby had some problems with helath, sont worry he is all ok now:) ) Normally i try to keep posts just ready to publish , thats why I can do it easily. Still just to spend more time with myself too , I am goin to alter some plans now.
I am glad that you liked it. I was thinking to try this salsa ever since i read about it, and it was truely great in taste. thanks dear .

Usha,
My hubby don't feel so as I normally do not steal time to post here when he is around. :) . Initially i also find this blogging thing much addictive and somehting with which i can spend hours and hours, ever since i realised that I have defined my priority in life anf that helps me a lot . I jsut do it for fun , nothing with pressure. thanks for your concern ,I am feeling fine anf fresh now, all I needed was just a ful night rest to feel healthy again. :) .Happy Pongal dear!
